What the heck is zucchini doing in a cake recipe!?!




Trust me on this, IT IS AMAZING!


Zucchini cake is a delicious and moist dessert that incorporates grated zucchini into a sweet cake batter. It's often spiced with cinnamon and nutmeg and can be topped with cream cheese frosting or a simple glaze. You can add walnuts or pecans to your mix or my personal favorite- chocolate chips!



To make a zucchini cake, you can follow a similar process as making zucchini bread, but adjust the ingredients slightly to create a cake texture. Here's a basic recipe:


Ingredients:

- 2 cups all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground nutmeg

- 1/2 cup granulated sugar

- 1/2 cup packed light brown sugar

- 1/2 cup vegetable oil (or melted butter)

- 2 large eggs

- 1 teaspoon pure vanilla extract

- 1 1/2 cups grated zucchini (about 1 medium-sized zucchini)

- 1/2 cup chopped walnuts, pecans or chocolate chips (optional)



Instructions:


1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.


2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined. Set aside.


3. In a separate large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil (or melted butter) until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.


4. Add the grated zucchini to the wet ingredients and stir until evenly combined.


5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you're using nuts or chocolate chips, fold them into the batter.



6. Pour the batter into the prepared baking pan and spread it out evenly.


7. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.


8. Once the zucchini cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.


9. You can serve the zucchini cake as is, or frost it with cream cheese frosting or a glaze of your choice.
